The Deal
Giving food lovers a true taste of rural Britain, three courses sourced from a 20-mile radius around Oxford begin with starters including gazpacho (usually £4.95). Then, the main event: a choice of three sausages from a wide range of well-known and unusual flavours, from Cumberland, and wild mushroom and garlic, to boar and pigeon, to lamb and mint (£12.49). These will be accompanied by a choice of mash including grain mustard and spring onion, plus sides of peas, red cabbage, and fried onions, and gravy such as red wine and rosemary. “Sausages are the favourite food of Great Britain. Ours are locally sourced, top quality, fabulous-tasting, and each one supporting the local farmers who produce them.”
G: What made you want to work in food?
“I love hosting dinner parties that celebrate British cuisine. It’s the greatest treat for me. Also to be able to celebrate Oxfordshire’s produce and show so many people how good we are.”
G: What is the restaurant’s best sausage?
“Pork and apple is the undeniable king of the sausage world. Ours are made with cider, chunks of apple, concentrated apple juice and top-quality pork. Of the veggie selection, basil and vine tomato sausages are pretty great.”
G: What’s your personal favourite from the menu?
“I’d either have one of our Sunday roasts or a whole hog, featuring a smorgasbord of sausages to share between four or six people. Breakfasts are pretty fabulous - I’d happily eat the whole lot each and every day.”
G: Who are your culinary inspirations?
“Heston Blumenthal and, I hate to say it, Jamie Oliver, who’s such a nice guy with such strong ethics and so much dedication. Locally, Raymond Blanc is the don.”
